Monte Nardi is a hard cow’s milk cheese honouring the early Italian settlers of the Northern Rivers. Families arriving from the Veneto region in the early 1900s brought farmhouse traditions with them. Drawing on that knowledge, and refining it over time, we shaped Monte Nardi into what it is today - Australia’s first truly regional cheese.
It carries the freshness of pasture-fed milk, with a gentle grassiness at its core. At three months it is mild and sweet with a touch of caramel, growing deeper and more complex as it matures.
