St Billie was developed in collaboration with Pascal Destandau, who generously helped us craft cheese close to his heart and home country. A surface-ripened lactic cheese in the style of Pélardon or Crottin, it has a dense, smooth paste and a delicate, lightly tacky rind. Gentle and expressive, it speaks clearly of milk and careful handling.

Traditionally served warm with a drizzle of honey, it sits beautifully with good bread and a glass of sweeter white wine.
